Legal to land Off Airport (and take off again)

Looking for some slow and low aircraft to scoot around the countryside.

Now, as much fun as it might be - is it even legal to land off airport and then take off again?
The barnstormers did it, sometimes bribing and upset landowner with a free ride.
Between a STOL aircraft, a WSC Trike, a PPC and a gyro - which one would be the most capable aircraft for this?

Just looking at performance it looks like the STOL fixed wing still has the advantage on a rough terrain takeoff roll.
Nothing can beat the gyro on the short field landing, but then I understand it still needs a faily long and smooth surface to take off again?

Per Region I am thinking New Mexico (lots of federal land), Texas, AZ and CO.
 
You can land in else-where areas almost anywhere with the owners permission.

Or if you have an emergency!

You can land anywhere in an emergency. You may be subject to fines and not be able to take off again, depending where it is. Most areas allow one to take off and land aircraft in rural areas with the land owner's permission or on your own property. There are some areas that have ordinances against it. You have to check your area.

All of the aircraft you mention have short-field capability. One advantage of gyros is their near indifference to gusty conditions that would keep the other choices on the ground or at least make them uncomfortable rides. A gyro can probably beat all of them for landing roll-out, except the PPC. It can come close to most of them for the take-off roll if equipped for that purpose (strong pre-rotator, significant horsepower and appropriate rotor system). That said, I wouldn't consider regular use of a runway less than 1000' long with a gyro, and even then more room would be best for a novice, even with a gyro with good short-field equipment.
