What to do in New South Wales, Australia??

My son is working over in Newcastle for a little while, I was wondering if there was anything that is a "must see" or "must do" while he is there.
Any foods to try, Beers? kangaroo boxing?

I am sure everything is different from where he lives now in Fairbanks, Alaska!
