What makes a good first gyro for a new pilot? What makes a bad one? Which models are best left to being ones second or third gyro (after experience is gained)?

I tried searching for an answer to this (figuring it MUST have been asked before), maybe I just searched poorly...

My suggestion is a new popular and well proven single place kit which has enough engine power for the particular pilot's weight. A heavy pilot needs more power than a light one. A good popular kit can later be sold to upgrade to a more complex or two place gyro if desired. For the first gyro I recommend a new light engine, rather than converting an auto engine - Rotax is the best popular brand (503 or 582).

You can learn a lot if you build a kit, but can save some money buying one already built. Kits I would consider would be the "centerline thrust" models: Butterfly/Monarch, Air Command, and Dominator.
