Seriously, though, while the video is spectacular and yes, they apparently do it that way at a lot of places, I can tell you I would be sacked on the spot for making cattle gallop like that, just not on or necessary where I work.
What they dont show or tell you is the number of cattle that die once yarded because of stress cause they have got the cattle so hot their internals cook. We trot the cattle sometimes but most of the time its walking pace . I might spend 15 minutes just blocking [ stopping] the cattle from galloping, keeping them rounded up in a group until the cattle settle down so that they will walk off nice & quietly and so that the ground crew have the cattle under control and dont have to race all over the place risking injury or damage to equipment.

Birdy flies a lot smoother than those guys in the video.

Yes it takes a lot of skill to fly like that!
Yes that kind of flying is NOT good for the aircraft OR the cattle!
