What do you think is the bare minimum for instrumentation?

1. Air Speed Indicator
2. Engine Heat (CHT or water temp)
3. Engine Tachometer

It may slightly vary on what kind of flying you use to do and what are emerg. landing conditions enroute.

I'd suggest
1. digital RRPM
2. slip indicator (this simpliest one
3. engine rpm
4. airspeed

In case you fly crosscountry more should be added for engine monitoring and some navigation device would be helpful once. I'd also added at least fuel reserve lamp.
