2 IVO Props.

I have seen PPC'S with two, 3 blade IVO props stacked on each other creating a 6 blade prop.

Does anyone know how they adjust the pitch on the inside prop!

Not really sure, Maybe Ivo prop knows. Have you given them a call?

IVO also has a pitch adjust that works by sandwiching shims in the hub. That's probably what they used. SnoBird had a 6 bladed "Stealth" gyro for the European market that utilized the dual IVOs (among other things).
It was very quiet.
