I have:

A Rotax 503 DCDI with a B box 2.58:1 (original engine from the Dominator)

a new set of Brock 22ft blades (I have the facilities to make up a 4 or 5ft hub bar)

New Brock head

New Brock joystick

A set of wheels

A seat tank

What would you do to join them all up to make a lightweight minimum flyable fun machine?

Gyrobee variant of some sort would seem to fit.

A Bee or Hornet are obvious choices. You could make a plans built aviomania gyro too...

Yep, the Gyrobee looks like a runner, I was looking for any other design I may not have thought of. I was really impressed with the performance of the Gyrobee that I saw flying in Mentone.
